Brick Ovens: Beautiful, Functional

A better brick oven makes a better pizza. I build commercial and residential brick ovens throughout the Northeast. Since 1979, I have also become expert in the design, construction, and restoration of authentic beehive baking ovens.

With a Catmount brick oven, you can produce reliable, consistent results that are hard to match using other woodburning ovens. Fine hand craftsmanship goes into every Catmount brick oven. An oven typically takes 4 workers about 3 weeks to build a custom brick oven.

After the concrete base is formed and the hearth is installed (we often use Soapstone as it absorbs heat 3 times faster than brick), we set the wooden forms for the dome. Next, we apply the high-duty fire bricks to the dome form and apply mortar. Concealed oven lights can be installed so that when the fire dies down, the chef can still see the food cooking inside. The mortar takes about 2 weeks to cure.

Immediately after removing the wood form, we scrape and clean the inside. You can begin cooking in about two weeks. Start with small fires, then increase the size each day until the top of the dome reaches between 1,600 to 1,800 degrees F, and the hearth is about 700 to 900 degrees F.

Beehive Ovens: Unique Home Cooking

I design, construct, and restore authentic beehive baking ovens for the home. These are miniaturized versions of the big restaurant pizza ovens that I build, and they can cook and do everything as well as their big brothers. They range in size from 3′ to 4′ in diameter, and they can be finished with brick or stucco.

These backyard ovens are great for home entertaining, on the patio or by the pool. Do chicken barbecues in them, or roast salmon on an oak board. Food cooked in this way is delicious, and because there is no door in the way, you can watch your food cook. It’s great entertainment!
